  • ½ cup unsalted butter (room temperature, divided: 6 tablespoons for the dough and 2 tablespoons melted for brushing the baked cookies)
  • 1 ¾ cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ cup granulated sugar
  • ¼ cup plus 2 teaspoons brown sugar (light or dark, packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted for cinnamon sugar coating)
  • ¼ cup sugar for cinnamon sugar coating
  • ½ teaspoon cinnamon for cinnamon sugar coating
  • ½ cup unsalted butter (room temperature for icing)
  • 1 ¼1 ½ cups powdered sugar (sifted)
  • 4 ½ ounces cream cheese (room temperature for icing)
  • 2 tablespoons brown sugar (light or dark for icing)
  • ½ teaspoon vanilla extract for icing
  • 1 pinch salt for icing

Instructions

  1. Preheat oven to 350°F. Simmer apple cider in a saucepan until reduced to 1/4 cup, about 30–35 minutes.
  2. In a bowl, sift flour, baking powder, baking soda, salt, and spices together.
  3. In another bowl, cream together butter and sugars until smooth. Add eggs one at a time, followed by vanilla and reduced cider.
  4. Gradually mix in dry ingredients until just combined.
  5. Drop dough onto parchment-lined sheets, spacing them apart. Bake for 11–13 minutes until springy.
  6. Cool cookies on wire racks; fill with your choice of icing once cooled.
