  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream (or Greek yogurt)
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and prepare your baking dish with butter and parchment paper.
  2. Boil apple cider in a sauté pan until reduced by half. Measure out three-fourths of a cup and whisk in diced butter until melted.
  3. In a bowl, mix eggs, sugars, oil, sour cream, baking powder, baking soda, spices, and salt.
  4. Slowly add the boiled cider mixture while whisking.
  5. Gently fold in flour until just combined.
  6. Pour batter into the prepared dish and bake for 22-25 minutes until golden.
  7. Cool briefly, then brush with melted butter and sprinkle with cinnamon sugar.
