  • 45 lb beef shoulder roast
  • 2 tablespoons neutral oil
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons Dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic
  • Fresh rosemary and thyme sprigs
  • 1 red onion
  • 2 firm apples

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Trim excess fat from the beef and cut into large pieces. Pat dry.
  3. In a Dutch oven, heat oil over medium-high heat. Sear beef until browned on all sides.
  4. Whisk together apple cider, chicken stock, Dijon mustard, and minced onion.
  5. Pour braising liquid over seared beef; add herbs bundle and garlic head.
  6. Cover tightly and braise in the oven for about three hours, flipping halfway through.
  7. Add red onion and apple wedges during the last cooking stage.
