  • 1 can (15 ounces) pumpkin purée
  • 2 cloves garlic, minced
  • Juice of ½ lemon
  • ⅓ cup tahini
  • 1 tablespoon pure maple syrup
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • ¾ teaspoon ground cinnamon
  • Pinch cayenne pepper
  • ¼ cup olive oil
  • ¼ cup ice water

Instructions

  1. In a food processor, combine chickpeas, pumpkin purée, and garlic. Pulse until broken down.
  2. Add lemon juice, tahini, maple syrup, salt, cumin, cinnamon, and cayenne pepper; blend until smooth.
  3. While processing, slowly drizzle in olive oil for about 2-3 minutes until creamy.
  4. Gradually add ice water one tablespoon at a time until desired smoothness is achieved.
  5. Transfer to a bowl, drizzle with olive oil and optional toppings like pomegranate arils or chopped rosemary.
